| Winemaker's notes |
| This Pinot Gris wine was crafted for enhanced complexity. The grapes were hand harvested and half were gently de-stemmed while the other half were left as whole bunches. Both fractions were added together and left to soak with the skins for 40 hours, which gave the wine a lovely, subtle rose-petal hue. Low fermentation temperatures and an aromatic yeast were used to accentuate the vibrant Pinot Gris characters. The wine spent two months on light lees post ferment to increase the complexity and mouth-feel. Prior to bottling, the wine was filtered as lightly as possible to maintain complexity.
