| Hinton Hill Country Merlot |
|
| Tasting notes |
| Blackberry and cherry jam with a hint of plum that carries through to the palate. Medium bodied with well integrated tannins. A complex, but approachable wine that drinks beautifully now or can be cellared through to 2012.

| Winemaker's notes |
| The Merlot grapes were hand harvested and gently destemmed. After 9 days of cold soak, the must was allowed to warm and a traditional yeast was added for the fermentation process. The wine was pressed off the skins and aged 11 months in 50% new French oak barrels to soften the tannins and add vanilla, spicy and toasty flavors. Careful barrel rackings every three months eliminated the need for filtration. |
